History

The Greek king Seleucus during his campaign in India (305-303 BC), mentioned that rice with pulses is very popular among people of the Indian subcontinent.Strabo also notes that Indian food mainly consisted of rice porridge and a beverage made of rice, presently called arak.The Moroccan traveller Ibn Battuta mentions khichdi as a dish in India composed of rice and mung beans, during his stay around 1350.khichdi is described in the writings of Afanasiy Nikitin, a Russian adventurer who travelled to the Indian subcontinent in the 15th century. It was very popular with the Mughals, especially Jahangir. Ain-i-Akbari, a 16th-century document written by Mughal Emperor Akbar's vizier, Abu'l Fadl, mentions the recipe for khichdi, which gives seven variations.

Summarised Preparation

To make Khichdi, wash new rice and soaked urad dal with water and keep it aside.

Now turn on the gas and keep the cooker and add one spoon of desi ghee and let it heat.

When the ghee becomes hot, add cumin, green chilli, asafoetida and stir well.

Now add peas, potatoes, tomatoes and cabbage in ghee and fry everything well for 5 minutes.

Add turmeric and garam masala to the vegetable and mix.

Once the vegetables are cooked, drain the water from the lentils and rice and fry while mixing it with the vegetables.

Now add 3-4 cups of water, mix everything and close the lid and cook the khichdi for 3-4 whistles.

After 3-4 whistles, turn off the flame and when the whistle stops, mix everything with a ladle and take it out in a bowl.

Garnish with green coriander leaves and serve.

  • 1 tsp Mustard seeds / Kaduku

  • 1 tsp Channa Dal / Kadala Paruppu

  • 2 Dry Red Chillies

  • 1 spring Curry leaves

  • 1 tsp Turmeric Powder / Manjal Podi to taste
